Fried Egg Avocado

Recipe: Fried Egg Avocado Tostada + Shallots

A true Californians breakfast!! I can at least pretend I’m back there sometimes 😉

When it’s cold & gloomy here in the PNW, this breakfast just sounds sooo appealing to me! It might not seem like anything special, but just wait until you taste all of these flavors together! Fucking YES 100x. While eating, my hubs just kept doing the silent nod & “MMMM”-ing. Yup, you gotta try it now 😉

Crunchy.

Creamy.

Saucy.

Buttery. 

Egg-tastic.

Goodness.

And let’s be honest… anything doused in hot sauce is just better (Chili Garlic Cholula in my opinion).

There’s not much to the recipe—give it a try!

Scrambled eggs aren’t nearly as impressive 😉

Fried Egg Avocado

Ingredients

|  GUAC   |

  • 2 Avocado (mashed)
  • ½ Lime (juiced)
  • ¼ tsp Garlic Salt
  • ¼ tsp Kosher Salt
  • 1/8 tsp Garlic Powder

|  TOSTADA  |

  • 4 Eggs
  • 4 Tostadas (gluten-free)
  • 2 Shallots (small dice)
  • 2 tbsp Butter (possibly more (add as you go))
  • Salt & Pepper (for eggs)
  • Hot Sauce (optional)

Instructions

|  GUAC   |

  1. In a  bowl, mash the avocados with the remaining guac ingredients.
  2. Taste & adjust seasonings to your liking; set aside.

|  TOSTADA  |

  1. Heat the butter in a non-stick skillet over medium heat.
  2. When the skillet is hot, carefully crack the egg over the pan, holding the egg as close to the pan as possible. Feel free to immediately push the egg whites with a spatula to form more of a circle shape.
  3. Sprinkle the egg with salt & pepper. Let it cook for 2-3 minutes, until golden underneath.
  4. Carefully flip the egg over & cook another 2-3 minutes, or to desired doneness!
  5. When the egg is done, place on a plate with paper towels to absorb the excess butter.
  6. Repeat the frying process with the remaining eggs. You may need to add a tablespoon or so of butter as you go! You be the judge of that…
  7. When the eggs are done, in the same pan, toss your shallots in the pan & give them a quick sauté for just a couple minutes (until softened). Set aside.

|  ASSEMBLY  |

  1. To assemble, spread your guac mixture over the tostada shell.
  2. Top with a sprinkle of shallots.
  3. Place the fried egg on top.
  4. Douse with hot sauce!!
  5. EASY PEAS + bomb as fuck.
